Preparation time 10-15 mins
For the dressing
Juice of 1 lemon
1 tbs runny honey
Sprinkle about 1/4 tsp of ground ginger
Same amount of ground cinnamon
90-100ml olive oil
For the salad
Small handful pistachios about 30 nuts
4-6 stalks fresh parsley
Start by making the dressing, this can be done in the serving bowl. Add all the ingredients and mix them thoroughly.
Now grate the carrots, if you do this on a machine use the finer grater. Add them to the dressing as soon as they are grated as they will oxidise and go brown very quickly. Toss thoroughly.
Chop the pistachios roughly into halves and finely chop the parsley. Add both to the carrot mixture along with a handful of sultanas.
Now mix the whole thing thoroughly.
