2 tbs mayonnaise
2 tbs salad cream
1 tsp mustard
Juice of half a lemon
70-100ml Milk – I use almond milk but cows milk works too
Put mayonnaise, salad cream, mustard and lemon juice into large salad bowl and mix together thoroughly with whisk or fork. Now add milk until it is the consistency of double cream.
Put to one side.
Take your celeriac and cut off the knobbly bits then peel the rest until it looks like the picture above. Now grate in your food processor. It is possible to hand grate but quite hard work. Put the celeriac into the bowl with the dressing and mix thoroughly until all celeriac is covered with dressing. Serve. That’s it, it’s that simple. Why not give it a go.
We have it with cold meats and a green salad or with roast butternut squash and tahini dressing (see recipe) as well as the lentils left over from Sweet potato dish!
