Serves 4 as a side dish

330g whole leaf curly kale

For the dressing
1 grated sharp apple
Half teaspoon mustard
Squeeze lemon juice
Olive oil

Topped with toasted flaked almonds quantity to your taste

You will need a steaming saucepan, a grater and a salad bowl.
Cut the stalks from the kale and chop finely. Place in the steamer over boiling water and steam for 2-3 minutes until just tender.
While the kale is steaming, peel and core the apple and then grate it into the salad bowl. Add the other dressing ingredients and mix. Once the kale is ready stir it thoroughly with the dressing then cover with foil or a plate and leave while you prepare the rest of the meal.
When nearly ready toast the flaked almonds until just turning golden at the edges and sprinkle over the top.
